Hi Everyone,
In the midst of a tomato scandal, I grew my own tomato garden in my backyard. It wasn't premeditated, nor did I have a psychic moment where I could predict that tomatoes would one day kill us all.
Sheerly luck!
Well my garden is raging, so many tomatoes, I can't make enough tomato-ee stuff to eat. And you know how much kids love tomatoes. My 7 year old gags when I show him one.
I came up with this recipe: he never knows he is eating them...
I am Turkish and we never measure our recipes. Measurements are completely based on speculation. No measuring cups in my house. I do not claim any responsibility if you can't make this yourself. If you run into problems, you know where to find me.
Lemon Orzo Tomato Soup that Rocks.
4-5 mid sized tomatoes
1 chicken thigh or breast, better with bone, and even better with skin, but that is not as healthy
2 tablespoons of olive oil, butter for picky kids
1/2 cup of orzo
4 cups of warm water
1 egg yolk
1 lemon
Heat up a pot, melt butter and add grated tomatoes, the pickier the eater, the finer the grating. Cook until the extra juice of the tomatoes evaporates. Add your raw meat, water and salt and boil. Once boiling, add the orzo. Check the chicken to see if it is cooked and your orzo should be nice and long and opaque. Once you do that, in a separate bowl, mix egg yolk with lemon juice from one lemon. Put in a few spoons full of hot soup to heat the egg mixture. Add the egg, soup, lemon mixture to the pot slowly. Bring to boil. Turn off heat, close lid and wait 5 minutes before serving. Add parsley flakes for you and your husband. Voila! Healthy tomato soup with lemon and orzo. And oh, the tomato is our friend again. It turns out peppers were to blame.
