Curry Sauce1 can unsweetened coconut milk
1teaspoon ground cardamom
3 kaffir lime leaves
2 cloves garlic
2 tbsp diced shallot
2 tbsp light brown sugar
2 tbs fresh lime juice
1 teaspoon fresh ginger grated
1 tbsp Thai red curry paste
2 tsp fish sauce
1 tsp soy sauce
1 cup chicken broth
1/4 cup white wine
Sauté shallots and garlic in 1 tbsp oil. Add other ingredients and boil to reduce about 10 minutes. Puree and strain.
Lime Batter
3/4 cup flour
1/4 cup cornstarch
1 tbsp red curry paste
1 tsp salt
1/2 tsp ground black pepper
3/4 cup ginger ale
1/4 cup lime juice
Whisk together to form a batter.
Shrimp
1/2 cup cornstarch
2 cups flaked coconut
1/2 cup panko breadcrumbs
1 pound shrimp, 26 to 30 count
Dip shrimp into cornstarch, then batter, then coconut mixed with the panko.
Deep fry at 350 until golden brown.
