Chocolate Mint Brownies

These brownies are awesome!!! My son is a brownie fanatic and I've always baked the ones in the store until I tried this recipe. Now, this brownie is his favorite... Try it, you will love it!

Ingredients
• 1  cup self rising flour
• 1/2 cup unsalted butter, softened
• 1 cup sugar
• 4 eggs
• 1-1/2 cups (16 oz can) chocolate syrup
• 1/4 teaspoon salt

Mint Layer:
• 2 tablespoons butter, softened
• 2 cups confectioners’ sugar
• 1 cup whipping cream
• 2 oz cream chese, softened
• 1/2 teaspoon mint extract

Chocolate Glaze:
• 1/3 cup whole milk
• 1/4 cup butter
• 1 12-ounce bag semi-sweet chocolate chips or mint chocolate chips
• 1 teaspoon vanilla

Directions
Preheat oven to 350 degrees F.

Place sugar and butter in a large bowl; beat with a mixer at high speed until fluffy. Add eggs, one at a time and beat in syrup. Add flour and salt and mix well. Pour into 13-in. x 9-in. baking pan that has been lined with parchment paper. Bake at 350° for 30 minutes until the brownies start to pull away from the sides of the pan. Cool on a wire rack.

For mint layer, beat all the ingredients until smooth. You can add a few drops of green food coloring if you want green color frosting. Spread over cooled brownies. Refrigerate until firm.

For topping, combine 1/3 cup whole milk and 1/4 cup butter saucepan over medium heat. When it boils,  pour the mixture over the chocolate chips in a large bowl.  Add the vanilla extract to the mixture and whisk until smooth. Cool for 30 minutes, stirring occasionally. Spread over filling. Store in refrigerator.
