Boo Cookies

Ghost CookiesBaking cookies with kids is great way to have fun!..

From the beginning of October, my 5 year old son is counting the day left before Halloween and dreaming about ghost cookies. I don’t know where he got the ghost cookie idea, but he asks me every day when we will bake cookiesJ

My son’s school will be having a Halloween party and we decided to bake these ghost cookies.

The following is an easy recipe (Thanks to Betty Crocker) .

Cookies:

1 Pouch Betty Crocker Sugar Cookie mix (17.5 oz)

Lemon Zest (I love cookies with lemon flavor. I used 1 lemon)

6 Tbs butter (softened)

1 Egg

1. Heat oven to 375 degrees F. Stir cookie mix, melted butter and egg in medium bowl until soft dough forms.

2. Use a ghost shaped cookie cutter.

3. Bake until edges are light golden brown (10-13 min). Cool 1 minute before removing from cookie sheet.

Sugar frosting :

8 ounces miniature marshmallows
2 tablespoons water
1 lbs powdered sugar
A pinch of salt
Little bit of honey
A handful of chocolate chips

Mix the marshmallows and water and melt in the microwave. Stir regularly until the mixture is smooth.

Add the powdered sugar and salt. It will be sticky at first, but then will develop a smooth consistency.

Use a little bit of honey to stick the frosting on the cookies.

Melt the chocolate chips to make the eyes and mouth..

Have fun!

October 2011 Just picked up a copy at my daughter's Little Gym class and found myself reading it instead of my Kindle! Enjoyed many of the essays, particularly the first year teacher at an inner-city school...and so many other articles. Kristine Meldrum Denholm, freelance journalist
